Ingredients of Mango Sticky Rice

  1. You need 250 g of short-grain rice.
  2. It’s 350 of + 50ml canned light coconut milk.
  3. You need 100 g of erythritol.
  4. It’s 1/4 tsp of salt.
  5. Prepare 1 tsp of cardamom.

Mango Sticky Rice instructions

  1. Rinse and soak rice for 30min.
  2. Drain rice, steam for 30min or until soft.
  3. Separately combine 350ml coconut milk, erythritol, salt & cardamom. Bring to almost a boil.
  4. Combine rice and sauce, let sit 20-30min.
  5. Refrigerate.
  6. Add extra 50ml coconut milk (and water) if too dry.
